Biography Jacob Santolaya, M.D., is an Assistant Professor in the Department of Pediatrics at UT Southwestern Medical Center. His research focuses on clinical and quality improvement in pediatric patients with inflammatory bowel disease and the effect of colonic enteroendocrine cells on host metabolism and microbiome. Dr. Santolaya earned his medical degree at Rutgers Robert Wood Johnson Medical School. He completed a residency in pediatrics at the Children’s Hospital of Philadelphia and received advanced training through a pediatric gastroenterology fellowship at UT Southwestern. Dr. Santolaya joined the UT Southwestern faculty in 2022. He is a member of the American Academy of Pediatrics and the North American Society for Pediatric Gastroenterology, Hepatology, and Nutrition.
