Biography

Bernadette Latson is an Assistant Professor and Director of the Coordinated Program in Clinical Dietetics of the Department of Clinical Nutrition. She is a registered dietitian with the American Dietetic Association and a Certified Diabetes Educator. Ms. Latson teaches a senior level course entitled Nutrition in Aging and other specialized theory areas in nutrition such as nutritional assessment, diabetes, pulmonary disease and eating disorders. She is the coordinator of practicum for dietetic students in hospitals, extended care and ambulatory care settings. She provides interdisciplinary continuing education at the School of Allied Health Science and UT Southwestern Medical Center. Her clinical practice is at the Aston Ambulatory Care Center where she provides medical nutrition therapy for patients with amyotrophic lateral sclerosis. For many years she practiced as a diabetes educator and a member of the treatment team on adult eating disorders in the Dept. of Psychiatry. Ms.Latson is frequently invited to speak on nutrition topics for the community. She has presented subjects such as Nutrient Needs of Older Adults, The Skinny on Fad Diets and a 21st Century Approach to Geriatric Nutrition. She has also authored education videos on topics such as Resident Nutrition for the Long Term Care Network, and the Dietitian’s Role in the Treatment of Eating Disorders. Ms. Latson obtained her Masters Degree at the University of Florida, and is a member of the national, state and local chapters of the American Dietetic Association, as well as a member of the Board of Directors of the University of Texas Southwestern Medical Center School of Allied Health Sciences Faculty Service Plan.
